This past season’s homerun was the Raspberry Rally cookie, similar to the famous Thin Mints except with a raspberry center. The cookie was introduced via online sales only and made the news due to it being sold out, creating a supply and demand crunch.

The new flavor debuted to much fanfare for the 2023 cookie season. One important distinction is that they were offered for online sales only to give the Girl Scouts experience in e-commerce sales. However, this move backfired when the demand via the ease of online selling exceeded supply. This led to Raspberry Rally cookies being sold at an absurd price of up to 7x on resale marketplaces.

While only the manufacturers of Girl Scout cookies know for sure how to make the authentic Raspberry Rally cookies, we made what we consider a similar version using a simple sugar shortbread cookie base and freeze dried natural raspberry powder. The powder is great for an all-natural raspberry flavor and pink color without adding excess moisture to your cookie base. The simple ingredients are butter, sugar, flour and salt.

Can I use chocolate chips for the melted chocolate?

Chocolate chips have emulsifiers that don’t allow them to melt well. For that reason, we like to use chocolate melting wafers for dipped cookies which lead to a smoother finish and coating.

What do Raspberry Rally cookies taste like?

If you’ve had Thin Mints you’ll know they are a crispy chocolate cookie with a thin coating of chocolate. Since the Raspberry Rally cookies are meant to emulate Thin Mints except with a berry flavor, we tried to get that same crispness by baking up a crisp shortbread cookie dipped in chocolate. The natural raspberry flavor really adds a natural berry flavor without messing with the cookie’s texture, keeping it nice and crisp with no added moisture.

The viral Girl Scouts Raspberry Rally cookie - a fruity sister to the popular Thin Mint cookie - made waves when it was sold out due to online demand. Make your own right at home with our copycat recipe!

Ingredients

  • 2 Cups Flour, minus 2 TBSP
  • 1 Cup unsaltebutter, softened
  • 1/2 Cup sugar
  • 1/2 Tsp Kosher salt
  • 2 TBSP Raspberry powder
  • 1-2 drops pink gel food coloring (optional if you want a deeper pink color)
  • Chocolate melting wafers

Instructions

  • Preheat your oven to 350 degrees. Line two baking sheets with parchemnt paper.

  • Cream your butter and sugar using a stand mixer or hand mixer on med-high speed until fluffy about 5 minutes.

  • Add the raspberry powder, flour, salt and gel food coloring if using. Blend until just combine mixing on low-medium speed until a dough forms.

  • Place your cookie dough between two sheets of parchmen paper. Roll to 3/8" thick and then place in the refrigerator to chill for about 20-30 minutes.

  • Cut out 2" round cookies. Place them 1" apart on the baking sheet and bake for about 10-12 minutes until the edges are very lightly golden. That's when you'll know they are done. Allow to cool for 10 minutes before removing.

  • Melt your chocolate wafers according to the direcitons.

  • Using tongs or two forks, dip each cookie into the melted chocolate. Let hte excess drip off. Add to a grated baking rack with parchment under to catch drips. Let the chocolate harden before eating or place in the fridge until set.

  • The recipe makes 36 2" cookies.
